   The new cellar

The estate has two cellars. One was renovated four years ago and is equipped with brand new oenology equipment. The destemming and crushing machine, oenology pumps, wine tanks and semi-automatic bottling and corking line are all made of stainless steel. The barrels in which alcoholic and malo lactic fermentation take place are all insulated and, thanks to a heat conditioning system, it is possible to control temperature during the most delicate winemaking phases.

   The old cellar

Renovation work is underway to recover the historical cellar built at the beginning of the 19th century, where the bottles and oak barrels for ageing the wine will be housed. It is a room with visible brick walls and the classic ceiling typical of Piedmont “croutin” or cellars. The direct contact of the structure with the ground makes it possible to maintain a constant cellar temperature all year round, preventing drastic differences in temperature which damage a product as delicate as wine.
